This 5 course dinner feat. Italian wines, has been designed from a collaboration between our Chef Chase Ingalls, our Head Baker Jen Mello and MariaPia De Pasquale of 100% Italiano and is sure to delight!

{1} Seared Hudson Valley Foie Gras with Apricot Confit, Blueberry Basil Gastrique and Prosciutto Crisp

Pairing:Terre Gaie-Prosecco Spumante Brut – 100% Glera (Sparkling)
{2} Herbed Rabbit Rillette with Sherry Braised Cranberry and Walnut Compote, Apple Cider Reduction and Baby Pea Shoots

Pairing: Alberto Longo-Falanghina ‘Le Fossette’ – 100% Falanghina (white)
{3} Whole Smoked Suckling Pig with Lentil-Salsify Vol au Vent, Roasted Carrots and Red Wine Butter*

Pairing: Marilena Barbera-Nero d’Avola doc Sicilia 2013 (Certified Organic)
{4} Braised Hatcher Lamb Ragout with Wild Mushrooms, Caramelized Pearl Onions and Herbed Purple Potato Puree

Pairing: DaCapo-Barbera d’Asti ‘Sanbastian’ – 100% Barbera (Certified Organic)
{5} Peach Hazelnut Pavlova – preserved peaches, hazelnut meringue, fresh berries
