In every Roaster Series release, we aim to produce a coffee that’s not only delicious but also has an interesting backstory. That’s why we’re excited to feature El Salvador Bernardina Honey Anaerobic Coffee, which is the twelfth coffee in our Roaster Series line.
We’ve been releasing this coffee annually for four years, and it’s become one of our favorites. The origin story of this coffee is what makes it so special. In 2013, when Maria Pacas and her family bought the Finca Los Bellotos farm in El Salvador, their farm manager, Ruperto, discovered a plot of trees that produced super distinct, flavorful cherries. He suggested that they test the trees and see what kind of coffee they could produce. After taking samples and analyzing the DNA structure, they discovered a whole new variety of coffee that had not been previously known in the coffee world. When it came time to decide what to call this coffee, they decided to name it after the man who first discovered it – Ruperto Bernardino Merche.
This coffee is only grown on Maria Pacas’ family farms across El Salvador, and this year, we have a lot from their Finca el Retiro farm. If you’ve had this coffee before, you know what to expect – a complex and nuanced cup of coffee. What makes this coffee so special is the super intense fruity, sweet malic fruits like white peach, as well as the intense floral and spicy aromatics like orange blossom and ginger snap.
As a roaster, the key is to accentuate the coffee’s inherent sweetness and keep a nice amount of acidity while not rushing through all the natural floral complexities that this coffee has. When roasting this coffee, we use our 22-kilo production roaster to keep the roasting time down and avoid over-roasting. We want to make sure that all of the nuanced components of the coffee are preserved and that the coffee is not too roasty or underdeveloped.
