Fresh to our single origin offerings is Colombia Dos Santiagos, named after its two producers, Santiago Orozo & Santiago Dávila. These two young men are coffee producers who collaborate with other farmers in Sonson, Antioquia. They are passionate about improving coffee quality and aspire to create a lasting legacy for future generations of producers. From the same importers who provided us with our Roaster Series #9 Andres Cardona, Unblended, we are honored to once again work with an importing group that has its sights on improving the future of coffee.

The two Santiagos source their cherries from their families’ farms, Los Mandarinos and La Palma. The coffee is harvested from a small plantation mainly consisting of Cenicafe 1 and Castillo varieties. Only the ripest and reddest cherries are selected, and the de-pulping process is done without water. The beans are then allowed to ferment for 24-30 hours, before being washed and placed in a marquesina to dry. This meticulous process is a testament to their dedication to producing high-quality coffee.

This microlot presented to us classic notes of washed Colombian coffees that have made the origin synonymous with high-quality coffee. We taste notes of creamy Milk Dud candy, sweet, nutty pralines, and the juicy acidity of Concord grapes. It’s a balanced, everyday drinker, and we’re excited to play a small role in its journey from the farm to your cup.

What is Single Origin Coffee? Unlike coffee blends, Single Origin Coffee has a single geographic origin. This could be a single farm or a single country. For the majority of these coffees, we will have a direct relationship with the farmer who grows them. Because coffee is a crop, harvesting is seasonal and the timing is specific to each region, our selection of single-origin coffees will vary throughout the year.
