Carolina Ramirez
After studying law in MedellÃn, Carolina returned to her family’s farm in the Andes, where she discovered her passion for specialty coffee. Today, she works alongside her mother at their San Antonio farm, both actively participating in selection and processing decisions. Carolina represents the new generation of Colombian coffee producers, making farming an attractive and sustainable career path for young people through the mentorship programs of the Unblended Ventola Institute.
Sara Tobon
Sara brings a fascinating perspective to coffee production. While working as a biomedical engineer in MedellÃn during the week, she spends weekends at La Cabaña farm applying knowledge passed down through generations from her father and grandfather. Together with her sister and boyfriend, Sara creates specialty coffees that showcase the hard work of coffee growers while raising awareness about agriculture’s importance in Colombia.
YCA Development Lot
This community lot represents Unblended’s Young Producer Program, which supports youth who have chosen coffee production as their calling. By blending contributions from multiple small producers, the program guarantees consistent quality and year-round availability while encouraging members to share their stories and challenges. This collaborative approach creates opportunities for young farmers committed to specialty coffee production.
The Processing Methods
Washed Process
This meticulous method creates a clean, clear cup profile by removing the coffee cherry’s fruit layer before fermentation. The process begins with a precise 9-hour fermentation of whole cherries, followed by depulping to remove the outer skin and most of the fruit. The seeds, still covered in a sticky mucilage layer, undergo a controlled 27-hour fermentation before thorough washing. After reaching optimal moisture levels during 2-3 weeks of drying, the parchment layer is removed before packaging.

Cup Profile: Balanced, creamy body with juicy, clean acidity
Honey Process
This hybrid method combines characteristics of both washed and natural processes, creating a uniquely balanced cup with both fruitiness and clarity. After several hours of fermentation, the cherries go through a depulper that removes only the outer skin, deliberately leaving the mucilage partially or completely intact around the seeds. The coffee then dries on raised beds for multiple weeks under careful monitoring. Once dry, the remaining mucilage and parchment are removed through hulling before shipment.
Tasting Notes: Cherry, cane sugar, cocoa nib
Cup Profile: Full, smooth body with crisp, malic acidity
Natural Process
This ancient technique produces a sweeter, more fruit-forward profile by leaving the entire cherry intact during processing. Freshly picked cherries are placed on raised beds where they dry for 2-6 weeks, with the duration depending on climate conditions. This extended contact between the seed and cherry creates distinctive flavor characteristics while requiring meticulous management to control fermentation and prevent mold. Once properly dried, the cherry layers are removed using hulling machines before the green coffee is sorted and packaged.

Each coffee is lightly roasted to preserve the distinctive characteristics imparted by its processing method, creating an educational tasting journey through one of Colombia’s most renowned coffee regions.
