Through careful processing, where coffee cherries dry slowly on raised beds for up to six weeks, this coffee achieves a distinctively sweet, fruit-forward profile. The mountain air circulation and precise humidity control during drying are crucial to developing the coffee’s complex flavors while preventing any risk of mold. Each step is meticulously managed, from initial cherry selection through fermentation and finally to hulling, where the dried fruit layer is gently removed to reveal pristine green coffee.

The Unblended Young Producer Program represents a new chapter in Colombian coffee. This Community Lot brings together passionate young farmers who have chosen coffee production as their life’s work, each contributing their highest quality cherries to create something remarkable. By combining their harvests, these small-scale producers create a consistently exceptional coffee while supporting each other’s growth in the industry. They share knowledge, techniques, and resources, learning from each other’s experiences across different microclimates and processing methods. Their commitment ensures both quality and sustainability, making this coffee available year-round from the high-altitude farms of Antioquia, where ideal growing conditions and generational knowledge meet modern innovation.
